The only one on the list that is disturbing is 'nuanced garlic.' Swear to me that you are not buying 'pre-fab' garlic!
Elaine uses the minced when she marinates tofu: it absorbs the liquid and has more flavor. Aside from that, we use fresh garlic, honest.
(For anyone who’s puzzled: the Elaine who uses minced garlic when marinating tofu is my wife Elaine Fine, a different Elaine.)
